Navigation is the biggest difference between Roborock S7 Maxv Ultra and Roborock S7 Pro Ultra. The newer Roborock S7 Pro Ultra got the main camera removed. So, while Roborock S7 Maxv Ultra is able to detect laying cords, shoes or toys, Roborock S7 Pro Ultra is not going to detect it and will start pushing around items laying on the ground and is much more likely will get stuck.
However, it is worth mentioning that compared to older Roborock Q7 series, Roborock S7 Pro Ultra when stuck is much better at finding a way out and getting unstuck.
Roborock S7 Maxv Ultra vs Roborock S7 Pro Ultra: Designs
Both S7 Maxv Ultra and S7 Pro Ultra have identical dimensions: The robots are 353 x 350 x 96.5mm and the charging docks are 422 x 504 x 420mm.
Main difference between the robots is the color. S7 Maxv Ultra is only offered in black and S7 Pro Ultra is only available in white colors.

Roborock S7 Maxv Ultra and Roborock S7 Pro Ultra are identical in cleaning performance. They both offer very good moping capabilities and powerful 5100 Pa suction power which is twice more than Roborock S7 can offer (2500 Pa).
The only difference between them is that Roborock S7 Maxv Ultra is a lot better at navigating around the objects laying on the floor.
If there are kids or dogs at home that might leave a mess on the floor for most of the people it would be worth investing in S7 Maxv Ultra. It will save a lot of time from preparing the floor for the robot every time before cleaning.
However, if there are usually nothing on the floor laying around the house it is better to save and choose the cheaper Roborock S7 Pro Ultra.
